Potato & Leek Soup

Serves: 4 servings   •   Time: 15-20 minutes


½ tbsp Olive oil
2-3 medium potatoes peeled and roughly diced
½ cup peas
1 Large Leek
1 onion diced
½ Cup Milk
4 Cups stock
Herbs and spices to taste: We used salt, pepper, garlic powder, onion powder, oregano


  1. Turn the menu knob to the fry button and press start
  2. Heat the oil
  3. Add the onions and leek and saute until soft (about 3 minutes)
  4. Add your herbs and spices and saute for a 30 seconds
  5. Add the potatoes and peas and continue cooking for 1 minute
  6. Add in the milk and stock
  7. Place the lid on the pressure cooker
  8. Press the DIY button and using the +/– buttons, set the time for 10 minutes. Note: The timer will only start counting down once optimum pressure has been reached in the cooker
  9. Press the pressure release button in order to release pressure. Wait until there is no steam blowing
  10. Once all the pressure has been released, open the lid
  11. Transfer the soup to a blender and blend in batches until smooth
  12. Enjoy!
