Cheesy Lentils and Brown Rice

Serves: 4   •   Time: 40 minutes

Ingredients:

½ Red onion, finely chopped
½ Red bell pepper, finely chopped
4 Garlic cloves, minced
¾ Brown rice
¾ Cup brown lentils
2 ½ Cups vegetable stock
1 Can diced tomatoes
1 Tsp thyme
2 Tsp oregano
Salt and pepper to taste
2 Cups grated cheese (mozzarella and sharp cheddar)

Method:

  1. Place all the ingredients into the inner pot except the cheese. Mix well and close the lid
  2. Turn the menu dial until you reach the “Stew” function. Using the +/- buttons, adjust the time to 18 minutes
  3. Press start to begin cooking. Music will sound and the cooker will start the countdown once the optimum pressure has been reached inside
  4. When the timer ends, cooker will beep and will switch to the “Keep Warm” function automatically.
  5. Let the pressure cooker naturally release on its own for 15 minutes
  6. Press the pressure release button to get rid of any excess pressure and then open the lid
  7. Stir in half of the cheese. Sprinkle the remaining cheese over the top and place the lid back on. Allow it stand for 5 minutes
  8. Enjoy!
