Hearty Beef Stew
Serves: 4 • Time: 40 min

Ingredients:
- 800g beef stew cubes
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 garlic cloves, minced
- 4 medium potatoes, peeled and cubed
- 3 carrots, sliced
- 2 celery stalks, sliced
- 2 teaspoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 2 cups beef broth
- Salt and pepper to taste
Method:
- Brown the beef:
Turn on your Midea 8L pressure cooker and select the "Sauté" or "Brown" mode.
Add olive oil and let it heat up.
Add the beef cubes and cook for about 5-7 minutes until they are browned on all sides.
Remove and set aside. - Sauté Aromatics:
In the same pot, add chopped onions and minced garlic.
Sauté until fragrant and translucent, about 2-3 minutes. - Add Tomato Paste and Spices:
Stir in the tomato paste, thyme, and paprika.
Cook for another minute to release the flavours. - Combine Ingredients:
Return the browned beef to the pot.
Add potatoes, carrots, celery, beef broth, salt, and pepper.
Mix everything well - Cook Under Pressure:
Secure the lid on your pressure cooker.
Select "Manual" or "Pressure Cook" mode for 30 minutes at high pressure. - Release Pressure:
Once cooking is complete, carefully perform a quick release or allow natural release, per your preference. - Final Tasting and Serving:
Open the lid, stir the stew, and adjust seasoning if needed.
Serve hot with crusty bread or rice for a comforting meal.
Tips:
- For a thicker stew, stir in a slurry of 1 tablespoon cornstarch mixed with 2 tablespoons water during the last 5 minutes of cooking and simmer until thickened.
- Feel free to add other vegetables like peas or green beans towards the end of cooking.
- For extra flavour, garnish with fresh herbs like parsley before serving.
