Microwave
Stuffed Bell peppers
Serves: 4 • Time: 15 min

Ingredients:
- 4 large bell peppers
- 1 cup cooked rice
- 1/2 cup cooked ground meat
- 1/2 cup shredded cheese
- 1/2 cup diced tomatoes
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp paprika (Optional)
- 1 tsp dried herbs (oregano, thyme, or Italian seasoning)
- Salt and pepper, to taste
- Fresh parsley or coriander for garnish
Method:
- Prepare the Bell Peppers
Rinse the peppers thoroughly.
Slice off the tops and carefully remove seeds and membranes.
If needed, trim a tiny bit of the bottom so they stand upright (be careful not to make a hole). - Partially cook the Peppers (to soften slightly)
Place the peppers upright in a microwave-safe dish.
Add about 1/4 cup of water or broth to the dish.
Cover with microwave-safe lid or microwave-safe plate.
Microwave on high for 3–4 minutes to soften slightly. (Adjust time if your peppers are very thick.) Drain excess liquid.
- Prepare the Filling
In a microwave-safe bowl, combine olive oil, chopped onion, and minced garlic.
Microwave on high for 2–3 minutes until softened.
Add cooked ground meat, cooked rice, diced tomatoes, paprika, herbs, salt, and pepper.
Mix well, then microwave for another 1–2 minutes to heat through.
Stir in half of the shredded cheese.
- Stuff the Peppers
Spoon the filling into each prepared pepper.
Top each with the remaining cheese.
- Microwave to Finish
Place stuffed peppers in the dish.
Cover loosely with microwave-safe lid.
Microwave on high for 4–6 minutes, or until the peppers are tender and the cheese is melted.
- Garnish & Serve
Carefully remove from microwave.
Garnish with chopped fresh parsley or coriander.
Serve hot.
