Vegetarian Cottage Pie

With Midea's InstaFry we have combined two of South Africa's favourite cooking appliances into one to bring you a twist on a traditional favourite; the cottage. Make yourself at home with healthy meals from Midea.

Method:

Mashed Potatoes:

  1. Add salted water to your Midea InstaFry pot
  2. Add your potato and butternut into pot (peeled and cubed)
  3. Put on pressure lid
  4. Select the DIY function and set the timer to 8 minutes
  5. Once done, quick release the pressure valve and move potatoes and butternut into a bowl
  6. Mash potatoes and butternut
  7. Add parmesan cheese and stir
  8. Once done, set aside.

Vegtable Mix:

  1. Heat olive oil in your pot
  2. Sauté the onion and garlic for 1-2 minutes
  3. Add carrots, mushrooms, eggplant and green pepper
  4. Cook for 5 minutes until the vegetables have softened
  5. Add peas, tomato puree, vegetable stock and spices
  6. Cook for another 5-10 minutes or until liquid reduces and the sauce thickens
  7. Add salt and pepper to taste.

Final Touch:

  1. Once complete add mashed potatoes and butternut mixture on top of vegetable mix
  2. Use a spoon to spread the mash evenly over the top of the vegetable mix
  3. Place your pressure cooker lid and select the DIY function, setting the timer to 8 minutes
  4. After cooking quick release the pressure valve
  5. Open the lid and add cheddar cheese on top of your pie
  6. Switch to the air fryer lid and select the air fry function, setting the timer to 15 minutes
  7. Once done remove the lid and leave the pie to rest for 5 minutes.
  8. Serve and enjoy!
