Steam-Roasted Herb Potatoes
Serves: 4 - 6 side dish servings • Time: 20 - 25 min

Ingredients:
- 1Kg Baby potatoes
- 1 Tbsp oil
- ½ Tsp Salt
- ½ Tsp Garlic powder
- ½ Tsp Italian herbs
- ¼ Tsp Rosemary
- ½ Cup water or stock
Method:
- On the pressure cooker control panel turn the menu knob to the “Fry” function and press start.
- Once hot, add the oil and place the potatoes in a single layer making sure they all have contact with the bottom of the pot (you may need to do this in batches)
- Mix all the spices together in a small bowl and then sprinkle them over the potatoes
- Brown the potatoes on both sides for 6-8 minutes
- Using a fork, pierce the middle of each potato
- Pour in the ½ cup of water or stock
- Place the lid on the pressure cooker and cancel the “Fry” function
- Turn the menu knob again until you reach the “Steam” function (this will default to 10 minutes)
- Press start to begin cooking. Music will sound and the cooker will start the countdown once the optimum pressure has been reached inside
- When the timer ends, cooker will beep and will switch to the “Keep Warm” function automatically. Press the cancel button
- Release the pressure by holding the pressure release button on the top of the lid and then open the lid
