Beef Stew & Dumplings
Serves: 5 - 6 • Time: 55 min

Ingredients:
- 30ml olive oil
- 1kg beef, cut into cubes
- 1 large onion, diced
- 2 cloves garlic, crushed
- 4 medium tomatoes, diced
- 625ml beef stew mix
- Fresh mixed herbs (parsley and chives) – optional
- 1 pinch of salt
- Ground pepper to taste
- 400g pumpkin, cut into 2cm cubes
- 15ml flour
Optional ingredients:
- Carrots, diced
- Potatoes, cubed
- Beef broth
- 2 Bay leaves
Method:
- Add olive oil to your Midea InstaChef and turn on your sauté or browning setting allowing it to heat up.
- Then add your beef cubes to your pot and brown them on all sides. This helps to seal in the juices and adds flavor (do this in batches, if need be, to avoid overcrowding the Midea InstaChef). Remove the browned beef and set it aside.
- Then add diced onions and crushed garlic to your Midea InstaChef, sauté until the onions become translucent and fragrant.
- If you’re using optional ingredients like carrots, celery, or potatoes, add them to the Midea InstaChef and sauté for a few minutes until they start to soften.
- Return the browned beef cubes to the Midea InstaChef. Add the diced tomatoes, beef stew mix, fresh herbs, salt, ground pepper and worcestershire sauce or bay leaves.
- Add enough beef broth or water to cover the ingredients. Remember to follow Midea’s InstaChef guidelines for the maximum fill level of your pressure cooker.
- Close the Midea InstaChef lid securely and set it to high pressure-cooking mode. Cook the stew for 20 to 40 minutes, depending on the desired tenderness of the beef.
- Once done carefully release the pressure valve.
- In a separate small bowl, mix the flour with a little water to create a slurry and add to the stew to thicken the sauce. Stir well and allow the stew to simmer for a few more minutes until the sauce thickens.
- Taste the stew and adjust the seasonings if necessary.
- Finally, add the cubed pumpkin to the stew and cook for an additional 5-10 minutes, until the pumpkin is tender but not mushy.
- Once depressurized, add the rolled dumplings to the stew and leave it for another 10 minutes, allowing the pressure to come down naturally.
- Serve the beef stew hot, with the dumplings garnished with fresh herbs if desired.
