Hearty Beef Stew
Cook Time: Until beef is tender

Ingredients
- 800g stewing beef, cubed
- 2 tbsp oil
- Salt and pepper, to taste
- 1 onion, chopped
- 2 carrots, sliced
- 2 potatoes, cubed
- 3 garlic cloves, crushed
- 2 tbsp tomato paste
- 2 cups beef stock
- 1 cup water, or red wine for extra depth
- 1 tsp dried thyme
- 1 bay leaf
Optional: mushrooms
Method:
- Heat the oil in a large pot on the Midea 60cm Induction Hob.
- Season the beef with salt and pepper, then brown the cubes in batches until sealed on all sides.
- Add the onion and garlic, then cook until softened and fragrant.
- Stir in the tomato paste and cook for 1–2 minutes to deepen the flavour.
- Add the carrots, potatoes and optional mushrooms.
- Pour in the beef stock and water, or red wine if using.
- Add the dried thyme and bay leaf, then stir well.
- Reduce the heat and allow the stew to simmer gently until the beef is tender and the sauce has thickened.
- Remove the bay leaf before serving.
Serving sugestion
Serve with creamy mashed potatoes, rice, samp, pap or warm crusty bread.
