Air Fryer
Mediterranean-Style Snoek
Serves: 2–3 people

Ingredients:
- 1 medium snoek fillet (about 500-600 g), skin on, bones removed
- 1 tbsp olive oil
- 2 garlic cloves, minced
- 1 tsp smoked paprika
- ½ tsp dried oregano
- ½ tsp dried thyme
- Juice of ½ lemon + extra lemon slices for serving
- Salt & black pepper, to taste
Optional Mediterranean add-ons (for that look and flavour):
- Cherry tomatoes, halved
- 1 small red onion, sliced
- Green olives, pitted
- Fresh parsley or basil, chopped
Equipment:
- Midea MultiFlavour 7L Steam Air Fryer
- Parchment paper or air-fryer safe tray / rack insert
- Small bowl for marinade
Method:
- Marinate the Snoek
- In a bowl, mix olive oil, minced garlic, smoked paprika, oregano, thyme, lemon juice, salt and pepper.
- Rub this marinade all over the fillet, skin side included. Let it rest for 15–30 minutes if possible so flavours absorb.
- Prepare the Steam Air Fryer
- Set to Air Fry mode at 190°C and allow it to preheat for ~3 minutes.
- Meanwhile, prepare the tray or rack: line with parchment (if using) or lightly oil so the skin doesn’t stick.
- Arrange the Snoek & Add-Ons
- Place the fillet skin-side down on the tray/rack.
- Scatter cherry tomatoes, red onion slices and olives around the fish. These will roast nicely and juice helps flavour.
- Cooking Settings
- Temperature: 190°C
- Time: ~12-15 minutes, depending on thickness of the fillet.
- Check for Doneness
- The fish should flake easily with a fork, be opaque through the thickest part.
- If using a thermometer, internal temperature ~ 63-65°C.
- Finish & Serve
- Once cooked, remove gently. Let rest 2 minutes.
- Sprinkle with fresh parsley/basil, squeeze extra lemon over.
- Serve with a side of steamed green veggies or a fresh salad, maybe some roasted sweet potatoes or a slice of crusty bread if you like.
