Chocolate Lava Cake
Serves: 2 - 3 • Prep Time: ± 15 minutes • Cook Time: ± 10 minutes

Ingredients:
- 100g dark chocolate
- 60g unsalted butter
- 1 large egg
- ¼ cup (50g) caster sugar
- 2 tbsp flour
- 1 tbsp Cocoa powder (for dusting)
- ½ tsp vanilla essence (Optional)
- Pinch of salt
- Butter (for greasing ramekins)
Method:
-
Prep the Ramekins
- Grease 2–3 small ramekins with butter and lightly dust with cocoa powder. This helps the cakes release easily.
-
Melt the Chocolate
- Melt the dark chocolate and butter together until smooth. You can do this in short bursts in your Midea microwave.
- Stir until glossy and combined.
-
Mix the Batter
- In a separate bowl, whisk the eggs and sugar until slightly pale and smooth.
- Add the vanilla and melted chocolate mixture.
- Fold in the flour and salt gently until combined.
Do not overmix.
-
Fill & Chill
- Pour the batter evenly into the ramekins. For an extra gooey centre, refrigerate for 10–15 minutes before air frying.
-
Air Fry in the Midea 4.7 LAir Fryer
- Preheat your Midea Air Fryer to 180°C for 3 minutes.
- Place ramekins inside the basket (leave space between them).
- Air fry at 180°C for 7–9 minutes.
The edges should be set, but the centre should still jiggle slightly.
-
Serve
- Let rest for 1–2 minutes.
- Run a knife gently around the edge and invert onto a plate.
Dust with icing sugar and serve warm with vanilla ice cream.
