Ingredients:
- 1 slice of White bread
- 100ml Milk - for the topping
- 20g Butter
- 1 Onion finely chopped
- 2 Garlic cloves finely chopped
- 700g Minced beef
- 2 Tablespoons curry paste
- 2 Tablespoon chutney
- 3 Bay leaves
- 2 Tablespoons raisins
- 1½ Teaspoon salt
Topping:
- 2 Eggs large
- 150ml Cream
- 1 Teaspoon Turmeric
- Reserved milk from above
Method:
- Preheat your Midea air fryer to 175°C
- In a shallow bowl, soak the bread in milk.
- In your baking dish, combine the sliced onions, garlic, and spices with butter. Bake this mixture until the onions become soft.
- Next, add the minced beef and cook it until it changes colour. Be sure to stir the mixture occasionally to ensure even cooking.
- Squeeze the milk from the soaked bread and set the milk aside, as you will need it for the topping.
- Add the soaked bread to the minced beef and stir thoroughly to combine. You can also add your raisins at this point.
- In a separate jug, whisk together the eggs, cream, turmeric, and the reserved milk. Pour this mixture onto the beef mixture in the baking dish.
- Bake the dish in the Midea air fryer for 30 minutes or until the topping becomes golden and sets.
- Garnish with extra bay leaves and enjoy!
