Croissant Bread Pudding

Ingredients

  • 4 cups croissants (cut into cubes)
  • 2 large eggs
  • 1 tin evaporated milk
  • 1 tin condensed milk
  • 300ml whole milk
  • 1-2 tsp ground cinnamon
  • ¼ cup sugar
  • 1 cup raisins (optional)
  • Cinnamon (to sprinkle)

Method

  1. Place the croissant cubes in the inner pot (if using raisins, put these in too)
  2. Whisk together the eggs, evaporated milk, condensed milk, whole milk, sugar and cinnamon
  3. Pour the mixture over the croissant cubes and let them soak for about 10-15 minutes until the bread no longer looks dry
  4. Place the lid on the pressure cooker and using the menu knob, select the “Dessert” function. Adjust the time to 30 minutes.
  5. Press start to begin cooking. Music will sound and the cooker will start the countdown once the optimum pressure has been reached inside
  6. When the timer ends, cooker will beep and will switch to the “Keep Warm” function automatically. Press the cancel button
  7. Release the pressure by holding the pressure release button on the top of the lid and then open the lid
  8. Scoop out servings of the dessert, sprinkle with cinnamon and serve with custard or ice cream
  9. Enjoy!
